I absolutely love these! They are perfect on-the-go healthy snacks that I discovered through Dani Spies, who is an amazing "clean & delicious" nutrition expert. All you need are 3 ingredients, but you can get creative with the combinations. I used unsalted almonds, sunflower seeds, pitted dates and chocolate chips. First you need a food processor to grind and combine the nuts/seeds with the dates. The stickiness is crucial for clumping and forming them into your desired shape. I rolled mine into balls; you can choose to flatten them out to make bars. Experiment with cashews and figs or cranberries and pistachios. Once they are prepared, place them on aluminum foil or parchment paper about an inch or so apart. Then Refrigerate. Once they have hardened, you can transfer them into a container for better storing. I don't always rely on a list of specific measurements because I believe that only you can truly measure for the portion you want to make, and your taste buds may call for more or less of a particular ingredient, seasoning, etc. So, my approach instead is to tell you what ingredients I used and hopefully you can remix it to your liking. This simple salad is so great because it incorporates some of my favorite food items. I absolutely love sweet potatoes. I have it at least 3 days a week. As for quinoa? I'm still a newbie on that train. But so far I'm enjoying the ride.
To achieve this colorful burst of deliciousness, I used about a cup of quinoa which is pretty much cooked like rice. I sauteed some onions seasoned with cilantro, garlic, pepper, and sea salt. In a separate pan, I cooked up the cubed sweet potatoes with coconut oil. I also added some cayenne pepper for that smoky aroma. If it takes a little while for them to soften, cover it with a lid every 5 minutes to help speed up the process. I then chose to grill some lightly salted and oiled asparagus spears.
Now Mix it all up! I chopped up the spears and tossed everything together in a bowl. Easy. Healthy. Delicious.
Remember, just like any other salad, you can be as creative or adventurous as you want by adding bell peppers, kale, cranberries, tomatoes, cheese, dressing, even fruit would go well with this combination.
