Sometimes a bomb ass pasta salad is all that is necessary to get your entire LIFE! Yup, I said it. Seriously, I've been making this dish like once a week--it's that good. And I have Trader Joe's to thank for all the healthy ingredients.
What You'll Need
2. In a skillet, cook your onions, green peppers and zucchini down for a few minutes. Add in the tomatoes and stir.
3. Add seasoning: thyme, basil, salt and pepper. Stir for 3-4 minutes, then turn off the heat.
4. Combine all ingredients along with pesto and tuna. Stir well.
Of course you can remix this by eliminating ingredients you don't like and adding your personal flavor. Enjoy!
I have to thank Liv B--one of my favorite YouTubers--as the inspiration for this recipe. Popular vegan burgers usually contain black beans and quinoa, but I wanted mine to resemble the texture of a falafel, so chickpeas worked perfectly!
What You'll Need:
1 large cooked sweet potato (peeled)
1 can of garbanzo beans (chickpeas)
1/2 cup of chopped onions
2 garlic cloves
1 tbsp of lemon juice
2 tsp of BBQ Sauce
1 tsp of cumin
1 tsp of paprika
1 tsp of pepper
1 tsp of oregano
Combine & pulse all ingredients in the food processor until you get a thick paste-like texture. Put a couple of tablespoons in your hand and roll into a ball. Place it on a baking sheet and gently press down into a patty. Repeat. The batter should make up to 6 patties. Bake at 350 degrees for 25-30 minutes, flipping it over at half time. You can also choose to cook them on a skillet with some oil for a crunchier outer texture. Dress up your burger with all the fancy veggies you love and enjoy!
